Superfood Energy Bites from Savor the Best

The season of backyard barbecues, picnics, and pool parties is here, and we celebrated with our very own virtual summer snack contest! Bloggers from all over the world shared healthy, crowd-pleasing recipes for the chance to be featured on our site. Each creation featured challenging ingredients, and submissions ranged from granola bars to salads and everything in between.

And the winning nutty creation is… This recipe for Superfood Energy Bites from Savor the Best! This from-scratch food blog is run by a mother-daughter pair, Dahn and Pat. These two created delicious energy bites that really pack a punch. Here’s a look at the recipe itself:

INSTRUCTIONS

  1. In a large food processor fitted with a metal blade, process the hazelnuts and macadamia nuts until crumbly. Add the cherries, goji berries, honey, acai powder, vanilla and salt. Process until a smooth, thick paste forms.
  2. Prepare the coating by placing the cacao nibs and goji berries in a pie plate.
  3. Scoop the dough by heaping tablespoons and roll into balls then roll them in the cacao nibs and/or goji berries to coat them.
  4. Place on a large plate or cookie sheet and chill in the refrigerator for 1 hour before serving.
  5. Keep stored in a sealed container in the refrigerator.

Savor the Best: We get together every week. We usually have something we want to cook together but sometimes we just sit and talk.

Nuts.com: What’s the one recipe on your blog that you can’t live without?

Savor the Best: One recipe that we love and have made several times is the Miso Glazed Sablefish with Wasabi Emulsion, it sounds fancy and intimidating but it is fast and easy to make and it gets rave reviews every time we make it.

Nuts.com: What’s your favorite memory from starting this blog together?

Savor the Best: We have so many great memories from starting this blog. The best part is that it has been an incentive to get together more frequently and plan food related trips. On one trip we went to Portland where we both had our laptops stolen. For a little while, the incident was quite distressing but we decided we were not going to let it ruin our trip. When a police officer interviewed us about the stolen laptops, he remarked that we must have a lot of fun together. His remark strengthened our resolve to make the best of the situation and we went on to have an incredibly fun trip in Portland. We even went shopping for new laptops and joked that it was like Christmas shopping.

Nuts.com: Any words of wisdom for aspiring chef/food bloggers out there?

Savor the Best: We would advise aspiring food bloggers to be prepared to put in a lot of time and hard work. Don’t be discouraged when you have to re-make a dish or when photos don’t turn out well. You will eventually find your own style and things will start to come together if you keep trying.
