Walnutty “Grounds”

Whether you’re planning to eat more plants in 2019 to benefit the environment, the animals or your own personal wellness, it can be challenging to feel as though certain cheeses or meaty dishes are “off limits.” With nuts, well, you DON’T have to feel deprived of some classic non-vegan staples like meats and cheeses.

You’ll have all the “grounds” for plant-based tacos or burritos with the help of this walnutty topping! Plus, all the flavor and a FRACTION of the fat and calories of the real stuff.

Instead of “faux” ground meat, we like to think of this as a high-protein plant based filling for tacos or pasta sauce-enricher! (It’s also super delish atop some nachos!)  You’ll need a food processor, baking sheet and (ideally) a silicone baking sheet liner.

3 Tasty Plant-Based Swaps with Nuts! – Walnutty “Grounds”


  • 2/3 cup TVP (you can use cooked lentils if soy-free)
  • 3/4 cup Raw English Walnuts
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon Chili Powder
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon cumin
  • 1/4 teaspoon pepper


  1. Combine all ingredients in a food processor and pulse to blend. You want a chunky texture to best replicate ground meat.
  2. Transfer to a lined baking sheet.
  3. Bake at 350°F for 20 minutes, turning the mixture over halfway through.
