Nothing says fall like the warm aroma of your favorite pumpkin treats wafting from the kitchen. In the case of these gluten-free pumpkin donuts, I’ve created a new kind of recipe but the result is comforting and nostalgic. If you’re looking for a better-for-you treat this holiday season, this recipe is for you. These pumpkin donuts are 100% gluten-free and baked in an oven, not deep-fried in oil. Plus, they’re no-knead, easy-to-make and ready in just 30 minutes.

All you really need to do for this recipe is whisk the donut ingredients together, pour the batter into a donut pan, and let the oven do the rest. It’s that simple! For the gluten-free batter, I relied on a combination of brown rice flour and almond flour. I prefer gluten-free flours because they tend to have a low-glycemic index and are rich in protein and fiber. In terms of taste and texture, no one will notice that the recipe is gluten-free. These treats have the ideal consistency of a cake donut.

Once the donuts have cooled down, they’re ready to eat but if you want to get a little fancy you can give them a coating of chocolate icing. Using a combination of dark chocolate chips and coconut oil, a homemade icing can be prepared in a jiffy. Just melt it in the microwave and pour the mixture over the donuts however generously you desire. A sprinkling of chopped walnuts lends a delicious nutty crunch to the treats.

    Hi, I was wondering if you could substitute the flours with Gluten Free all purpose flour as well as Coconut Flour– or does this ruin the texture?

      Hi Stacy! You can swap out almond milk for unsweetened coconut milk and coconut flour in replace of almond flour. 🙂
