1) Mini Chocolate Chip & Flax Banana Muffins
These breakfast muffins have a great consistency because they’re made from a combination of gluten-free flours like brown rice flour, millet flour and tapioca flour. Mini chocolate chips add the perfect touch of chocolate goodness, while flaxseed meal provides a healthy source of essential omega-3 fatty acids. They have a subtle banana flavor from the addition of fresh bananas. You can even sprinkle on a sugar and cinnamon topping for a real treat!
This is our basic low-carb pancakes recipe made using almond flour, so it’s naturally gluten-free. One of our customers told us that she likes to add half a mashed pear and a dash of cinnamon for extra flavoring. You can also try making it with a banana. Feel free to experiment to give the recipe your own yummy twist. Adding mashed fruit will also make the pancakes more moist, so it’s not a bad idea.
These delicious fruit & nut granola bars are not only gluten-free; they’re also vegan and dairy-free. The recipe was developed just for us by Miryam Quinn Doblas, RD. The base is made with our gluten free rolled oats, and it’s mixed with dried fruits such as mulberries and dried strawberries for extra vitamins and minerals. It also has nuts like cashews, as well as chia seeds and flaxseed meal for a boost of omega-3 fatty acids. The granola bars can be made in under an hour and you can enjoy them for the rest of the week!
What we love about this recipe from Wellness Mama is that it only involves a handful of all natural ingredients, and everything gets mixed together in one step. They are made with coconut flour for a fiber-rich treat. Coconut oil adds healthy fat, while eggs provide a good source of protein. You can either make a banana bread loaf or individual-sized muffins. Either way, this recipe whips up a delicious gluten-free breakfast.
These grain-free lemon and blueberry scones are the perfect treat to enjoy alongside a cup of tea or glass of milk. We love that they use a combination of almond flour and coconut flour in place of traditional wheat flour, so they’re a low-glycemic food. They also have a hint of chamomile and a touch of lemon zest that accentuates the flavor of fresh blueberries. No one will be able to guess these scones are gluten-free!
