Appetizers

Roasted Pears with Brie & Pistachios

Here are a few of the ingredients you’ll need: ripe pears, brie cheese, lemon juice, and toasted pistachios.

Eggplant Caponata Crostini

There’s no denying it: these eggplant caponata crostini are delicious. Here are some of the ingredients you’ll need: golden raisins, eggplant, pine nuts, and white-wine vinegar.

Sides

Couscous with Olives and Sun-Dried Tomato

This couscous with olives and sun-dried tomatoes dish is both vegan and vegetarian, but don’t let that fool you. This dish has plenty of flavor to go around. Bonus: it has a red and green theme going on, which makes it look extra festive for the holidays. You’ll need ingredients including Israeli couscous, shallots, black olives, pine nuts, and fresh parsley.

Roasted Cabbage with Walnut-Rosemary Dressing

This roasted cabbage with walnut-rosemary dressing is as wonderful as it sounds. Roasted cabbage is tasty on its own, but this walnut-rosemary dressing takes it to a whole other level. The rosemary even makes it taste like Christmas! Here are a few of the things you’ll need for this recipe: green cabbage, rosemary, walnuts, apple cider vinegar, and more.
