Baked Goods to Kick Off National Bake Week!
Tomorrow marks the start of National Bake Week so we’re kicking it off with five delicious baked goods! Unleash your inner baker and try your hand at one of these recipes.
1) Gluten-Free Coconut Flour Cupcakes

She calls her recipe “one-bowl coconut flour cupcakes” because you’ll only need one large bowl to mix the dry ingredients, and then add in the wet ingredients. There are no complicated steps involved in making these yummy cupcakes. With coconut flour as the base, these gluten-free and paleo baked treats are rich in fiber and low in carbs.
2) Brown Butter Chocolate Chip Hazelnut Cookie Bars
There is something so irresistible about chewy and delicious cookie bars, and this recipe from Maria of Two Peas and Their Pod is no exception. These delectable treats have a satisfying crunch from chopped hazelnuts and a sweet richness from chocolate chips. Maria sprinkles the cookie bars with sea salt to complement a perfect harmony of flavors. Go ahead and share these with your loved ones, unless you find that these treats are just too good to share!

That’s why we were delighted to come across Chocolate Covered Katie’s healthy and gluten-free recipe for tagalongs, aka peanut butter patties. Katie uses almond flour for the cookie’s base and a scoop of creamy peanut butter for the center. For the tops, you can melt chocolate chips and spread the coating over the cookies. Peanut butter, chocolate, and cookies… what’s not to love?
4) Gluten-Free Fudgy Brownie Cupcakes
Karina of Gluten-Free Goddess developed these scrumptious treats with the goal of creating a better-tasting gluten-free brownie. These fudgy brownie cupcakes are perfectly moist and soft in the center, and just a little crispy around the edges. Karina recommends using your choice of almond or hazelnut flour, along with sorghum flour. Rich and chocolatey, these cupcakes are ready to eat just as they are, without any kind of frosting added. Enjoy these as a snack or after-dinner dessert.
5) Oatmeal Cookies with Dark Chocolate, Cranberries, & Coconut
These oatmeal cookies from Kate of Our Best Bites may have a long name but it’s worth mentioning all of the ingredients that make them taste so good! Chewy and delicious, these cookies have a great texture and oatmeal flavor from rolled oats, and a fruity sweetness from dried cranberries. The chocolatey goodness comes from dark chocolate chips, and shredded coconut gives the cookies an interesting feel and mild coconut taste. Kate’s oatmeal cookies are wonderful with a tall glass of milk.
