Spice Up Your Memorial Day Weekend
Happy Memorial Day weekend to all! If your long weekend is anything like ours, you’ll spend these days visiting with friends and family, swimming and just plain having fun. We always like to have a big barbecue, complete with hamburgers, hot dogs and a table packed with appetizers and sides. We love to make a simple dip of nutty cheese baked with salsa on top for people to munch on while we’re firing up the grill. It’s one of our favorite appetizers, and we’re sure you’ll get a kick out of it, as well!
To start, mix 4 oz. of soft goat cheese and 4 oz. of cream cheese in a dish. Add about 1/3 cup of roasted (unsalted) pepitas or chopped walnut pieces into the cheese. Form the cheese into a ball and place it in a small baking dish. Pour about 1-1/2 cups of your favorite salsa over the cheese ball. Bake the dip at 350 degrees Fahrenheit for about 15 minutes, or until it’s warm and a little bubbly. Garnish it with sprigs of cilantro.
This dip is fantastic when served with tortilla chips, but we really like to eat it with our veggie chips. Other yummy dippers include garlic bagel chips and veggie sticks.
