Chocolate Mug Cake Recipe {Gluten-Free}

We’ve all experienced it. Those times when you want to bake a cake, but you don’t want to end up with a week’s worth of dessert. There must be a solution to this dilemma, you think, that will leave you with just enough cake to tide you over for a craving or two. That’s the beauty of the mug cake. In no time, you can whip up a delicious and moist little cake that is easy-to-make and gluten-free. No oven required, just your microwave!
Instead of all purpose flour, I called on coconut flour for this gluten-free variation on mug cake. Made only from organic coconuts, it’s low in carbs, yet packed with fiber and protein. Since it has a low-glycemic index, coconut flour is a healthier alternative to traditional flours in baking. I love baking with coconut flour because it creates light and soft baked goods, so you won’t even be able to tell your mug cake is gluten-free!
Cacao powder lends a rich chocolate flavor to the cake. Also a good source of antioxidants and fiber, cacao is wonderful in smoothies and other desserts, as well. Feel free to experiment with the flavors of your mug cake. If you’d like to make a peanut butter chocolate variation, simply add one tablespoon of peanut butter. A vanilla flavor can be achieved by omitting the cocoa powder and adding an extra teaspoon of coconut flour.
The best part about my chocolate mug cake recipe is that it makes the perfect portion for you and a loved one. When a baking desire hits, simply mix up the ingredients, transfer them to microwaveable mugs and microwave them for 3-5 minutes. In total, you’ll be spending less than 10 minutes to create a delectable chocolate delight. The recipe can even be cut in half if you just want dessert for one. Enjoy!
Ingredients
- 1/4 cup + 1 tbsp coconut flour
- 1/2 cup milk
- 2 eggs, room temperature
- 3 tbsp sugar
- 1 tbsp melted coconut oil
- 1 tbsp cacao powder
- 1/4 tsp baking powder
- 1 tsp vanilla extract
Instructions
- In a medium-sized bowl, whisk together eggs, milk, coconut oil and sugar until combined. Add the coconut flour, baking powder, cacao powder and vanilla extract and mix together.
- Divide the mixture between two microwavable mugs. Microwave for 3-5 minutes depending on the power of your microwave.
- Serve immediately.
