Dip Your Veggie Chips

In our house, springtime means barbecues, and boy, are we ready! We love to cook up a variety of meats and veggies on the grill, but we think the side dishes are just as important as the main course. When we’re hosting friends and family, we like to make sure we have a big bowl of crowd-pleasing veggie chips on hand, along with some homemade dip.

Our favorite dip for these chips is a garlicky, oniony concoction that really pairs well with the light crunch of the veggies. (The fact that it’s easy as pie to make is another plus!)

To start, put an 8 oz. brick of softened cream cheese and 1 cup of sour cream in a mixing bowl. Use an electric mixer to blend the two ingredients until they form a thick, creamy mixture with no lumps. If you want to thin out the dip a bit, add milk 1 tbsp. at a time until you reach the desired consistency. (Keep in mind that if you’re planning on refrigerating the dip for a few hours, that will thicken it slightly.)

Whisk about 3 tbsp. of finely chopped fresh chives into the dip. Then, season it with 2 to 4 tsp. of our yummy garlic and herb seasoning. We recommend that you add the seasoning 1 tsp. at a time, adjusting the dip until it suits your tastebuds.

Cover the dip and refrigerate it for up to a day before serving.

Of course, this dip base works with a variety of seasonings. For those who aren’t as keen on garlic, we add 2 to 4 tsp. of ranch seasoning instead. Dill weed and sour cream and onion seasoning are also amazingly tasty.

Likewise, this dip isn’t just for our famous veggie chips, although we think it’s pretty darn good with them! We always make sure to provide a yummy alternative, such as sea salt bagel chips, sweet potato chips or blue potato chips for guests who tend to shy away from vegetables.
