Holiday Goodies: Christmas Cookies
Are you baking up a storm for Christmas yet? We’ll admit that we haven’t quite gotten rolling on our holiday baking projects, but we do have our recipes and ingredients ready to go. Though our selection of cookies varies from year to year, there are a few yummy treats that we just couldn’t go without! Here are some of our favorite cookie recipes for the holiday season.
1)     White Chocolate, Cranberry and Macadamia Nut Cookies: Oh my goodness, these cookies really have it all. We love to load them up with plump whole dried cranberries and our huge, crisp roasted macadamia nuts. It just wouldn’t be Christmas without these cookies!
2)     Mexican Wedding Cookies: These powdered sugar-coated cookies are often called snowballs or Russian tea cakes, but in our house we just call them “delicious.†Mexican wedding cookies contain finely chopped toasted nuts and, though we’ve been known to use roasted almonds and English walnuts with good results, our absolute favorite nut to include in this tender cookie is our buttery roasted pistachios.
3)     Chewy Chocolate Almond Cookies: These are some of the best gluten-free cookies we’ve had. They’re easy to whip up, and they contain just enough almond flour to make them slightly sweet and nutty. Even if everyone in your house can eat gluten, these rich chocolate cookies are worthy of a spot on your holiday dessert table.
