How to Cook Tapioca Pearls
On your quest to bubble tea perfection, you’ll begin by preparing the black tapioca pearls, also called bubbles or boba. For every one cup of tapioca pearls, you’ll want to boil 8 cups of water. Do not add the pearls until the water is boiling to ensure that they cook all the way through. Once the water has come to a boil, add the pearls, reduce the heat to medium, and let them boil for 25 minutes without the lid. Stir the pearls occasionally to help them cook evenly.
After this stage, turn off the heat, cover the pot with a lid, and let them sit for half an hour. Pour the cooked pearls into a metal strainer and rinse with cool water to bring their temperature down. Once finished, these tapioca starch bubbles have a firm, chewy texture and slightly sweet flavor. Some people like to sweeten the pearls further by adding sugar or syrup. The pearls should be used immediately, or will last in the refrigerator for up to three days.
