Mango Cheesecake Freeze
Developed by our Health Nut and Registered Dietitian, Molly Morgan, this mango cheesecake freeze is a healthy way to enjoy a sweet treat! It’s refreshing, delicious, and can be made in a jiffy. The perfect treat for summer.
The base of the recipe is simply frozen mangoes and almond milk. Mangoes are rich in vitamins A and C, and retain high levels of these nutrients even when frozen. Combined with almond milk, the mango mixture is creamy and delicious, with a naturally sweet and vibrant tropical flavor.
Simply blend the frozen mangoes and almond milk until smooth.
Pour the mixture into the bottom of a glass jar or dish. You’re practically half-way done at this point!
For the next layer, you’ll need kefir, ice, vanilla yogurt, the remaining almond milk, and a dash of cinnamon. Kefir and yogurt are probiotic superstars! They provide an abundant source of probiotics, the beneficial bacteria that are essential to a healthy digestive system.
After you’ve blended these ingredients together, pour the mixture over the mango mixture. The sweetness of mango complements the tangy kefir-yogurt combination.
Finish it off with crumbly graham cracker goodness, and your mango cheesecake freeze is ready to enjoy!
Ingredients
- 1 cup frozen mango
- 1 cup ice
- 1/2 cup light almond milk, divided
- 1/2 cup original kefir
- Dash of cinnamon
- 1/4 cup vanilla yogurt
- 1 sheet graham cracker crumbs
Instructions
- In a blender, combine the frozen mango and 1/4 cup of almond milk. Blend until smooth. Fill the bottom of a glass with the mango mixture.
- Next in the blender, combine the kefir, ice, 1/4 cup of almond milk, dash of cinnamon, and vanilla yogurt. Blend until smooth. Pour this mixture over the mango mixture.
- Crumble two pieces of graham crackers over the top, and stir into the glass. Serve immediately.
