Springtime is Sandwich Time
Springtime is sandwich time around these parts, and we love nothing more than to pack up a delicious sammie or two and hit the road. But what kind is best? We often lean toward nut butter sandwiches, especially if we’re going to be outside or on a road trip. Most don’t require refrigeration, and even when they’d benefit from a cooler or an ice pack, they don’t have the same spoilage risks as sandwiches made with meat. Plus, they just taste delicious!
Even if you’re tired of the traditional PB&J, that shouldn’t stop you from enjoying a delicious and nutritious nut butter sandwich. Here are some of our favorite variations on the classic.
1) The Happy Apple: We’ve found this combo to be a big hit with kids of all ages. Spread a layer of crunchy organic peanut butter on two slices of multi-grain bread. Drizzle the peanut butter with honey and top it with a layer of thinly sliced apples. Close up your yummy sandwich, and you’re ready to go!
2) The Sunny Roll-Up: This is a great combo for those who are allergic to traditional nut butters. Start by heating a whole-wheat or regular burrito-sized tortilla in the microwave for 20 to 30 seconds. Spread a layer of organic sunflower butter on the tortilla, leaving about an inch-wide border around the edge. Sprinkle your favorite granola over the sunflower butter, then place a whole peeled banana in the center of the tortilla. Roll up the tortilla tightly and wrap it in foil until you’re ready to enjoy it!
3) The Cashew Griller: This decadent sandwich is good hot off the griddle or cold out of your lunch box. Butter two slices of a crusty white bread. On the unbuttered side of one of the slices, spread a layer of organic cashew butter. Follow that up with a slice of Havarti cheese, a layer of fig jam, and another slice of Havarti cheese. Spread some cashew butter on the other slice of bread, then place the slice (butter side up) on top of the last slice of cheese. Grill the sandwich in a cast-iron skillet over medium heat until the buttered sides are toasty and brown and the cheese melts.
4) The Extravagant Almond: Almond butter’s mild flavor pairs wonderfully with just about anything, and we love to use it as a basis for our gourmet creations. Spread two slices of your favorite bread with cream cheese, then top the cream cheese with a layer of organic raw crunchy almond butter. Drizzle the almond butter with pure organic honey and add a layer of thinly sliced strawberries or apples for good measure. Easy, yet impressive!
