Whip Up a Peanut Buttery Treat
Earlier this week, we celebrated National Peanut Butter Lovers Day. Well, we got so excited (and hungry) while describing some of our favorite peanut buttery treats that we just had to whip up a batch of peanut butter fudge to share with our family and friends. Though it isn’t fudge in the truest sense, this sweet is a must for anyone who can’t get enough peanut butter.
Start by greasing an 8-inch square baking dish with butter or cooking spray. In a saucepan, combine 1 cup of granulated sugar, 1 cup of light brown sugar, ½ cup of low-fat evaporated milk and 4 tbsp. of butter. Stir the mixture constantly and bring it to a boil over medium heat. Continue stirring the mixture and let it boil for an additional five minutes. Remove the saucepan from the burner and add ½ cup of chunky peanut butter. Beat the mixture until it loses its glossy finish, then pour it into the prepared dish.
Allow the fudge to set completely in the refrigerator, then slice it into bite-sized squares. For an extra-decadent dessert, spear the squares on toothpicks and dunk the peanut butter fudge in melted chocolate. Place the coated squares on a piece of wax paper to harden. Delish!
