Banana Pops are the Tops

We’ve been on the lookout for healthy, simple snacks that get us out of the post-holiday slump. We sure did find a winner in banana pops! Banana pops offer up the goodness of fruit, encased in yummy toppings and frozen on a stick. What could be better?

Start with a bunch of just barely ripe bananas. Peel them, cut them in half and slide a popsicle stick into the bottom of each banana half. Place the bananas on a cookie sheet lined with wax paper and put the pan in the freezer for at least an hour. While you’re waiting for the bananas to freeze, mix 1 to 2 cups of freeze-dried fruit with about a cup of toasted slivered almonds. We like to use Simply Strawberries, but Simply Pears and Simply Blueberries are also delicious.

When the bananas are frozen solid, remove them from the freezer. Dunk them in Pure Organic Honey, then roll them in the fruit and nut mixture. Place them back on the wax paper, then either consume the banana pops immediately or put them back in the freezer until it’s time to chow down.
