It’s been a while since I baked something but today I wanted to make a quick bread that was comforting, sweet and nutritious at the same time. My easy-to-make gluten-free chocolate streusel bread tastes like dessert, and passes for breakfast. It’s similar to coffee cake, but made with ingredients that lend a health boost.

The chocolate streusel bread is gluten-free with great texture and substance, thanks to this versatile kitchen staple: gluten-free all purpose baking flour. The recipe can also be made vegan with a couple recipe modifications. In place of a regular egg, create a “flax egg” by whisking together 1 tablespoon of flaxseed meal with 3 tablespoons of water. Once the mixture is well-combined, place it in the fridge and let it chill for 15 minutes. Substitute it for the regular egg in your recipe. The Greek yogurt can be replaced with dairy-free yogurt.

I incorporated hemp seeds into the streusel topping to contribute extra nutrition and crunch. Hemp seeds are a powerhouse of easily-digestible protein containing all nine essential amino acids. They also provide an ideal balance of essential fatty acids, a rich source of vitamin E, zinc, iron and more. I’ve been meaning to add more of this superfood to my diet, and using hemp seeds in baking is a great option. You can also toss them over salads, yogurt, or just eat them raw. They have a crunchy texture and nutty flavor that creates a nice complement for granola and other snacks.

The soft bread has a crumbly layer of streusel goodness made from a mixture of walnuts, shredded coconut, dark chocolate chips, sugar and a dash of cinnamon. Crunchy walnuts bestow heart-healthy omega-3 fatty acids, while light and crisp shredded coconut provides fiber. The melted dark chocolate and sugar-cinnamon sweetness make for a special treat that is perfect alongside a cup of coffee or tall glass of milk. I served my gluten-free chocolate streusel bread with a generous drizzling of melted dark chocolate over the top. Enjoy!

Can you go dairy free on this recipe? My wife has to be dairy-free and I don’t think the Greek yogurt will work for her.

Hi Robert – Yes, the dairy-free/vegan modifications are explained in the blog post. You can create a flax egg in place of a regular egg, and use dairy-free yogurt. Check the post for details about how to do this. Thanks!

I suspect you can replace the Greek yogurt with dairy-free yogurt. Give it a shot, anyway.
      I’m going to try this.

Can you sub the gluten free flour w a grain free flour (almond, coconut)?

Hi Terri – Almond flour should work fine. We wouldn’t recommend using coconut flour for this recipe because the proportions may be different. Thanks for checking!
