Rice to Meet You!

Bowl of rice We’ve recently added some new varieties of rice to our offerings at NutsOnline. We love these yummy grains in all their many forms, and look forward to including them in soups, side dishes, casseroles and even desserts! Yes sir, it’s mighty fantastic that something so delicious can also be so good for you.

Arborio rice is perfect for use in risotto, and we can see why. The short, starchy grains cook up creamy and slightly firm, leaving you with a rich and immensely satisfying dish. Besides risotto, another yummy dish in which to use Arborio rice is rice pudding. We love this recipe. It’s a little sweet, a little spicy and not too rich. It’s the perfect light dessert to round out a yummy Italian meal.

Northern wild rice is also always a hit on our dinner table. These unique, dark and chewy grains are perfect cooked up and topped with a little butter, or mixed into more complex pilaf-style dishes. We think this recipe for almond wild rice really hits the spot on chilly fall and winter days. It’s great paired with chicken, fish and even your Thanksgiving turkey! If you’re a vegetarian, we’ve also found this recipe to be quite yummy with cooked seasoned beans, such as chili beans or red beans.

Parboiled rice is a pretty special grain. The rice has been boiled in the husk, which drives the bran’s essential nutrients (including thiamine) into the grain. It has the consistency and appearance of white rice, but many of the nutritional benefits of brown rice. We tried using parboiled rice in Cooking Light’s Almost Classic Pork Fried Rice recipe and really liked the results. Though the recipe calls for brown rice, parboiled rice is a nice substitute if you have picky eaters in your family.
