Sweet Cookies for your Sweetheart
We think that Valentine’s Day calls for a special, rich treat that your loved ones will really enjoy. We crave chocolate this time of year: specifically, chocolate-covered strawberries and chocolate truffles. One day, we thought, “Wouldn’t it be nutty if we combined the flavors of our favorite Valentine’s treats in one yummy cookie?” So that’s what we did!
We love our deliciously sweet dried strawberries, and thought they would be perfect in a rich chocolate cookie. You can use your favorite chocolate or chocolate-chip cookie recipe for these yummy treats, substituting dried strawberries and chocolate chips for the original mix-ins. Our recipe is based off of this one from JoyofBaking.com.
Start by beating one stick of softened butter with ¼ cup of granulated sugar and ½ cup of light brown sugar. When they’re fluffy, add 1 egg and 1 tsp. of vanilla extract. Then, stir in 1 cup of flour, ¼ cup of Dutch cocoa powder, ½ tsp. of baking powder and 1/8 tsp. of salt.
Chop 1 cup of dried strawberries into small pieces (about the size of chocolate chips). Fold the chopped berries, along with ½ to 1 cup of organic dark chocolate chips or white chocolate chips, into the cookie batter.
Scoop the batter by the tablespoonful onto a greased cookie sheet. Bake the cookies at 350 degrees Fahrenheit for about 10 minutes, or until they’re firm around the edges. Let the cookies cool on the baking sheet for five to 10 minutes before transferring them to a cooling rack, as they will be quite soft in the center. The recipe should make about 20 cookies.
