Unlike other varieties of green tea, matcha leaves are carefully shaded from sunlight for 3 weeks before they are harvested.
This extra measure causes the leaves to become very tender, which produces a deep, rich flavor and high chlorophyll content. At this point, the youngest, most tender leaves are picked and separated from stems. The whole leaves are steamed once, and air-dried before they are finely ground into a powder. The special care that is taken to prepare matcha green tea ensures that they retain extremely high levels of the catechin, EGCG.
